
Speaking of cupcakes and health, Fort Worth, Texas's The Cupcake Cottage recently tested out an all-natural sweetener:

NBC 5 asked owner Sandra Bradshaw to substitute sugar for Swerve in her cupcakes and creamy frosting.
"The consistency, how it feels, I like it. I really wouldn't know the difference,” she said. "It is an incredibly moist cake."
"Looks, tastes, bakes and measures and cooks just like sugar,” naturopathic Dr. Catherine Wilbert said.
With no calories, Wilbert said her all-natural product beats all other sugar substitutes.
"Not only do you significantly reduce the calories, you also reduce the blood sugar impact of it, so you can help with weight management, blood sugar and energy level," she said.
But what about taste? Cupcake cottage customers put their taste buds to work.
"It's good," said Krista Sleeper. "I think it's so close you would never tell a difference."

Just to clarify, The Cupcake Cottage never has and never will bake with the sugar substitute, Swerve. We simply agreed to bake with the product for a local TV news station. The 'incredibly moist cake' quote was referring to our chocolate cupcake and not to a cake with the sugar substitute in it.
We only bake with pure cane sugar. mmmmmm.... =)

Swerve is awesome and I think we'll see more and more baked goods being introduced using it instead of Pure Cane Sugar.
We've gotta get healthy and start changing the diabetes and obesity epidemic!
I do not oppose to baking with Swerve, I simply do not bake with any artificial ingredients. There's an enormous difference between oppose and choice. I choose to bake with real sugar only. (and) I choose not to bake with Swerve.
Healthy eating and controlling sugar levels can be achieved by living a balanced life of food, excercise and spiritual well-being.
We have many diabetics that come to our shop and simply allow themselves portions of cupcakes that keep their blood-sugar count in their zone.
Most people that we encounter prefer a diet of natural ingredients to chemically processed substances.
Those folks wishing to seek one of the many artificially created substitute sweetners to use in baking are certainly welcome to do so. They've been doing it for years!
I think it's great that people seeking more options may find what they are looking for in Swerve. It's just not for me!

I recently read posts on the use of Swerve. I think it was great that The Cupcake Cottage tried that out for the news. I think someone stated that it is artificial. To provide some clarity,from my research, Swerve is a natural sweetner.It is mainly composed of eurythritol,an enzyme extracted from the plant and fruit fermentation process. To call it artificial I think would be a little extreme.Compared to the evils of Aspartame,Splenda and Suucralose, Swerve is a saint.I think it's worth researching. They also sell it at Whole Foods which I think says something. Nothing can get in their door that is not pure.For those interested cooking with Swerve,Kelly Keough has a A show called the Sweet Truth. Look it up on You-Tube and she has book using it as well.
