For Mother's Day (this Sunday, May 11th!), Canada's National Post's Shelf Life did a cupcake mix taste test. This mix won:

Currently, every major Canadian city boasts at least one cupcake enterprise. Food psychologists attribute the mini-cakes' popularity to at least two factors: first, their nostalgic appeal (one cupcake enthusiast is quoted as saying, "They remind me of my mother's kitchen, being 10 years old, and licking the spoon"), and second, their variety and mobility (who can deal with a whole cake these days?). Shelf Life thinks there's another factor at work. A cupcake offers creative possibilities. For many people, planning, making and eating cupcakes amounts to something like an art form, sprinkles and all.
So, Mother, we're making you cupcakes for Mother's Day. From a mix, just the way you like them. (Remember your cooking philosophy? "A minute saved in the kitchen is a minute gained at the racetrack.") Because we love you. And because a cupcake is a kiss that comes out of the oven (which is a half-baked way of saying it, but you know what we mean).
