Over at Blake Bakes, Carrie McClain of Carrie's Kitchen Creations has the recipe for the above Strawberry Celebration Cupcake. Yum!
She says:
Welcome to the debut of my first solo cupcake recipe: Strawberry Celebration Cupcakes! While I had a little help from Dorie, using her perfect party cake as inspiration, I believe I’ve ventured far enough away from the original to call this recipe my own. :-)
Recently my youngest sister graduated kindergarten. When my mother decided to throw her a little party to celebrate her success, I offered to make the cake. My little sister’s favorite cake flavor is, of course, strawberry! As we all know, there are no box mixes in Carrie’s Kitchen! I decided I would make a strawberry cake recipe all my own especially for my sister, my Princess. Well, the cake turned out alright and although everyone loved it, I was honestly a little disappointed. It did not fair well in the fridge overnight and by time we ate it on Saturday, all the whipped cream and strawberries had caused it to become a little soggy.
Then, last night, I had an epiphany; I would not give up my strawberry dreams! I would revamp the recipe and make cupcakes (and this time I would be smarter than to try to use a whipped cream frosting in June)!
