Since Maria was unavailable when I stopped by with Nick, she and I did an email interview.
So, Maria, will there be any new flavors for the fall? If so, can you give the readers a scoop?
We're working on some new ideas. We'll definitely bring back our pumpkin icing and we're starting to experiment with apple. [ed. note -- pumpkin, awesome! Also, while at the bakery, I heard rumblings about a banana-flavored icing, and possibly a peppermint frosting for the holidays. But, those could have just been rumors...]
What is the status of the beer and wine license Butter Lane was applying for?
We're still pursuing the license, but we're focusing on a few other parts of the business first. Our wholesale and catering areas are growing very quickly and we're really putting a lot of energy there at the moment.
What plans do you have to match wine and cupcakes? Will you offer pairings? Flights?
Still to be determined. I'm sure we'll get to that once we do (hopefully) get the license. But the main reason we want the license is so we can offer champagne for special events. Champagne with any flavor is our favorite pairing at the moment!
[ed. note: Pausing to wipe drool off chin.]
Is there any other place in NYC where you can buy Butter Lane cupcakes? Do you provide cupcakes to any restaurants?
You can buy Butter Lane cupcakes at the Food Cellar in Long Island City, NY. We're also supplying to a number of gourmet food shops in East Hampton and Sag Harbor (Long Island, NY). And we're in discussions with several other NYC businesses to distribute.
How is the "build your own" cupcake innovation working? Have people been making requests other than the options Butter Lane offers?
People really respond to the idea of "build your own." New Yorkers like to express their creativity. The "build your own" concept is just one more outlet for them! Plus it lets people have exactly what they want -- which is always something customers respond well to.
Is there anything you'd like to add for the picture/tasting post I'll be publishing?
Yes! We're starting to offer cupcake classes this month! Our first class is Tuesday, September 29. I've attached a flier for all the details.
Well, CTTC'ers, I couldn't figure out how to attach a .pdf document to the blog, so I copied the info in it and pasted it into the post. Skillz, huh?
Let us teach you how to make cupcakes the Butter Lane way! We provide all the equipment, ingredients and know-how—you provide yourself and your friends. Great for birthday parties and showers! Our classes are casual–from the baking enthusiast who wants to be a part of every step to the friend who’d rather assist (and taste)–our classes are meant to be fun & instructive, not hard core.
The basics; you’ll learn to…
Make two cupcake recipes (two cakes/two icings)
Work a mixer like a rock star
Bake in an industrial, convection oven (you’ll want one for your kitchen)
Make the perfect icing: the combo of butter & sugar that’s just right for you
Use the same high-quality ingredients we do (hint: all-organic dairy!)
Ice the prettiest cupcake (not as easy as it looks)
Taste the difference (finally!)
What you’ll need:
A good attitude, your own playlist if you want it, and anything you’d like to drink (we provide water) but BYOB is fine.
We supply the rest:
Ingredients, equipment, and aprons.
