Recipe and Giveaway (!) from "Sweets on a Stick"

Want a cute and happy cupcake project to make with your kids (or, even better, someone else's kids)? How about these sunny Oreo cookie cupcakes on a stick? Recipe and image printed with permission from Linda Vandermeer's Sweets on a Stick: More than 150 Kid-friendly Recipes for Cakes, Candies and Pies on the Go!

Sunny Oreo Cookie Bouquet

A beautiful bunch of flower cupcakes with a cookie center
that can brighten up any day. Get the kids to practice piping
on a clean piece of parchment paper before starting on the
cupcakes.

POP TIP: If you don’t have a piping tip, just pipe round dollops of buttercream.

Piping bag fitted with #68 tip
1 batch Vanilla Buttercream Frosting, or
Cream Cheese Frosting, colored yellow
1 batch Quick and Easy Mini Chocolate Cupcakes (baked
and cooled)
Mini Oreo cookies

1. Fit the #68 tip to the piping bag and fill with the yellow
buttercream frosting. Pipe a small dot of buttercream in
the center of the mini cupcake.

2. Working around the edge of the cupcake, pipe sunflower
petals by placing the edge of the piping tip against the
cupcake, applying slight pressure to the piping bag for a
second while pulling away from the cupcake, and then
releasing the pressure while continuing to pull the tip away.
Pipe all the way around the cupcake at least 2 times.

3. Place a mini Oreo cookie in the center of the cupcake,
pressing down lightly with your fingertip to secure.

4. Insert skewers into Styrofoam blocks. Near the top of
each skewer, about ¾" from the top, tie on a small
length of ribbon with a knot. The ribbon will keep the
cupcake from sliding down the skewer.

5. Holding the sides of the cupcake, gently press the cupcake
down onto the skewer until it seems secure and the
ribbon is holding it in place.
