Yesterday, with a few friends, I helped make The Barefoot Contessa's coconut cupcakes. I'd had some before and they were extremely dense, but these turned out light, fluffy, and delicious. We also had a HUGE bowl of frosting left over - any suggestions on what to do with it? We had extra cake batter too and so made a big cake after we made the cupcakes. I liked these without the frosting almost better than with; there's coconut in both the the frosting and the cake, and we added some to the top too. These are highly recommended!

Her recipes are always fabulous and I too have had an over abundance of batter and frosting. It is better than not enough.

The cupcakes you have photographed don't look like they have any frosting on them. Her original recipe states that you should completely fill (overfill) the muffin cups - these are meant to be oversized. Then you use all the frosting - load it on. Then the coconut on top. Just keep using the batter and frosting until it is all gone --then you are done!
