One of my favorite things about hearing about new bakeries is the names people come up with. So far, my hands down favorite is Albuquerque's Cake Fetish, but a close second is a new one we just got tipped off to by a reader who says they're the best they've tasted in Denver (thanks, JB!) is Happy Cakes. It's not a retail store yet but that's very likely the next step, and they have all sorts of flavor combos:

The pretzel one above is the Strawberry Pretzel:
Crunchy pretzel crust, strawberry cupcake with cream cheese frosting - the perfect marriage of sweet &salty! The Midwestern luncheon salad all in a cupcake!
They've also got a Root Beer Float cupcake (Delicious root beer cupcake with vanilla butter cream, topped with a cookie straw), Jack & Coke (Definitely for the grown-ups, a cola cupcake topped with bourbon buttercream), and French Toast (A maple cupcake topped with cinnamon butter cream, reminds you of Sunday morning brunch!), among others.
Happy indeed! Let us know if you try these. My big dream is to do a cupcake road trip and test all these out.
Working out along the way, of course.
