Pink Australia Day faux lamington cupcakes

From Flickr user nettness - they're coated in coconut and she described them as faux lamingtons and I had no idea what a lamington was, so for anyone else who's confused, brief description from Wikipedia below:



Lamingtons are sponge cake (or more traditionally, butter cake) cubes, coated in a layer of traditionally chocolate icing then desiccated coconut. They are sometimes served as two halves with a layer of cream and/or strawberry jam between, and are commonly found in Australian outlets such as coffee lounges, lunch bars, bakeries, and supermarkets. The strawberry variety is more common in New Zealand, while a lemon variety has been encountered in Australia. [1]

They remind me of Hostess' Tigertail, which was a twinkie with jam stripes and then coconut. Now I only see zingers on the market and they are not as good.

They are essentially a square or rectangle piece of sponge cake covered with chocolate icing and coconut.

You can also get them with strawberry icing but traditionally its chocolate and they should be about the size of your fist.

It's an Aussie thing, much like pavalova and vegemite.

Lol! I am Aussie and it sounds so funny to read about them as if they are never before heard about. I had no idea they were essentially australian. I just assumed they were world wide but I do remember a book when I was younger by Mem Fox called the magic possum or something like that with all vegemite and lamingtons and Aussie things in it.
They are nice though. Not as sweet as cake but a bit more temptimg for your sweet tooth than a biscuit or cookie. Very cute. I like them in chocolate though.
