I had some buttermilk left over after the lemon loaves I baked this week. I was searching the net for cupcake recipes to use it up. I came across this recipe on Martha Stewart's website last night. I was VERY dubious as they are low fat (why bother you ask) but as I bake each week for an elderly Uncle who is 'supposed' to be on a low fat diet I thought i'd give them a try.
