Fig Honey Caramel Cupcakes
Lactose Free Honey Caramel Sauce
1 cup honey
1/2 c. (1 stick) Margarine
2 c. brown sugar
3/4 c. soy creamer or soy milk
2 T. arrowroot (or cornstarch)
1. Combine honey, milk and margarine in saucepan.
2. Stir until mixture starts to boil. Add cornstarch or arrowroot.
3. Continue to boil, stirring, until thick and caramel colored, about 10 minutes.
4. Set aside to cool for cupcakes. I refrigerated it for a few hours
I added 1 cup to the cupcake batter and reserved the rest. I ended up with about 1 1/2 cups worth.
Fresh Fig Cupcake
125g / 4 oz / 1/2 cup butter
2 eggs
1/3 cup brown sugar
2 cups fresh figs, finely chopped
200ml / 6 1/2 oz vanilla yogurt
1/3 cup buttermilk (or Soy Milk (just under one cup) + 1 Tbs white vinegar or lemon juice)
2 1/2 cups plain (all-purpose flour)
1/2 tsp cloves
1/2 tsp baking soda
2 tsp baking powder
1 tsp salt
1. Preheat oven to 160 (325).
2. Line a 12 capacity muffin tray with cupcake liners.
3. Beat butter until soft.
4. Add sugar and cream with butter until light and fluffy.
5. Add eggs, one at a time, beating well after each addition.
6. Add figs, yogurt and buttermilk.
7. Sift together flour, baking soda, baking powder, cloves and salt.
8. Fold the sifted ingredients into the wet mixture.
9. Fold in 1 cup of cool honey caramel sauce.
10. Divide mixture evenly into cupcake liners.
11. Bake for 25 minutes or until a skewer comes out clean
Soy Cream Cheese Frosting
1 cup Shortening or Margarine
1 cup Powdered Sugar
8 ounces of Soy Cream Cheese
1/4 cup Honey/Caramel Sauce
Add this all to a mixer and whip the hell out of it till fluffy.
Drizzle some of the remaining Honey Caramel Sauce on Top
