I discovered Red Velvet Armadillo Bakeshop randomly via their blog. Not only do they have a creative name, but their cupcakes take standards like rocky road or Neopolitan and do something new and fun with them. Cupcakes with flair! Just check out their Neopolitan cupcake (the last one) to see what I mean about taking something we all know and doing something new with it. That's what I look for in a bakery, especially after I've eaten, oh, um...many hundreds (thousands?) of cupcakes in the last 4+ years of cupcake blogging!

They are a custom cupcake company serving northeast Florida, and can also be found on Facebook and Twitter.

This light and lowfat cupcake is the perfect treat for hot August days. A sweet, rustic merengue “cake” is stuffed with homemade strawberry and blueberry preserves, topped with a dollop of whipped cream and served to rave reviews. Out of this world!

Red Velvet Armadillo has the best cupcakes! If you are lucky enough to be in Jacksonville (or are a good personal friend!), you'll want to treat yourself.
