But Canadian Tom Grant — counting on the expanding appetites of young, hip Mexico City residents — is hoping to change that. If only slightly.
So far it’s been a piece of cake.
Grant, a former WestJet Airlines employee, is becoming Mexico City’s "cupcake king." Or as he overhears it as he treks to his trendy bakery, "chavo de los cupcake" — the "cupcake guy."
Two years ago, Grant — who runs an English language school in the city — opened "Cupcakes by Tom." It’s homage to the fresh doughnuts and pastry he’d buy in Canada and the U.S.
The Calgarian hopes to soon open another bakery here — then other franchises after that.
