Giveaway: Creamy Coconut Cupcake mix by King Arthur Flour

I recently got a chance to test the King Arthur Flour Creamy Coconut Cupcake mix, and reports are excellent.

The instructions are a little different than what I am used to (in terms of mixing order and beating time), but I followed them faithfully and came up with more than the 12 servings advertised. Score! I also made them different sizes, as I couldn't find my ice cream scoop and I was in a hurry. (As usual.)

I think I cooked them for 60 seconds or more too long. My oven normally needs an extra 2 to 3 minutes for cupcakes but I'd be more careful with this next time.



I frosted them with the mix, which I made according to the instructions included on the package. I gave a light hand on frosting as I had more than the 12 I thought I'd get (and also because I personally like a light frosting to cake ratio). YMMV. The frosting was rich and heavy and creamy and coconut-y. It's made with coconut milk too, so I thought that was a great supporting character in the frosting. I would totally use coconut milk in my homemade frosting too, something I'd not thought of.

I decided to top mine with sweetened shredded coconut (not included) but you could also use unsweetened. Or toasted, something I had planned to do but ran out of time. Or you could use something other than coconut. I bet toasted pecans or walnuts would work. Or cocoa powder dusted on top?

The cakes were light and coconutty and retained their moisture level several hours after they were made.

I would add minced glazed apricots, minced crystalized ginger, and a sprig of mint to top off the cupcakes! I may take a few and also top those few instead with a tsp of pumpkin butter,having scooped out a small dollop of cake form top, put the pumkin butter in, and then replace the dollop!

Oh yum! Those sound great. I think I would go with a cream cheese icing and to that I would add the coconut. YUMMY!

I think I would toss a bit of coconut to the cupcake mix too.

I sure hope I get a chance to try these out.

These sound great! I would add a little dark rum to the batter and frosting. I would definitely toast the coconut and then put it on the frosting.

I'm thinking if this mix is as good as described then to gild the lily these should be semi-filled with pineapple curd then topped with toasted coconut cream cheese frosting and a sprinkle of macadamia nuts.

Hmmm...I'd sprinkle them with some toasted almond pieces and slivers of dark chocolate. Juuuuust enough for a hint of all the flavors, so it would taste like one of my favorite candy bars!

I would separate some coconut into separate bowls and color them the same colors as the polka dots on the box. Then recombine the various colors and top each cupcake that way, with multi-colored coconut. Or just top each cupcake with a different color, just one color per cupcake.

I would crack open a coconut, chop it up into little half inch squares, then toast them tossed in equal parts of water and sugar first, until lightly golden on top, then place each toasted coconut square gently on top of the icing.

Looks scrumptious! I'd have to agree with the shredded coconut action, but I'd also add some chocolate shavings. And maybe, if I were bringing these to the office, say, alternate some cupcakes with pecans or almonds, some with just some white sprinkles (how can you turn down pretty cupcakes? and white sprinkles are just gorgeous in their simplicity). These could go totally tropical with pineapple and macadamia nuts. Toasted almonds would be great too. I would make them first just as they are because coconut on it's own is fabulous!

I think I would make them as directed then add sweetened shredded coconut on top of the frosting, then drizzle some melted dark chocolate over the shredded coconut, then put a single roasted almond in the middle. Then it would be like an Almond Joy!

Two thoughts come to mind, some chopped almonds, mini-chocolate chips or shaved dark chocolate and some unsweetened coconut. Giving you the Almond Joy/Mounds taste. Or you can go with a winter theme and frost the cupcakes with a more wisply look then sprinkle on some edible glitter or pearl dust to give them some sparkle - if you add coconut you can mix the glitter in with that!

I would make fondant "Yetis" covered in flaked coconut for their fur and place them on top of the coconut frosting. Or a fondant snowman or snow woman. Make it a fun winter theme. The coconut cupcake is usually associated with summer so something fun to make it winter-y. Maybe even add some pear luster dust to give shimmer

I would call them "Monkeys & Coconuts" ... Scoop out a bit of the center, fill it with Banana's Foster (bananas sauted with butter, brown sugar & rum), frost with the coconut frosting after folding in 4 oz of softened cream cheese and top it off with toasted flaked coconut and a drizzle of homemade caramel with run sauce ... OMG I think I want to make these now *LOL*

I would love to make these cupcakes the way my Nana made her coconut cake. I would cut them in half so I could put a layer of coconut filling in the middle, and I would top them with cream of coconut so it would soak through and moisten the cake, and then top with coconut shavings and a cherry!
