I recently got a chance to test the King Arthur Flour Creamy Coconut Cupcake mix, and reports are excellent.

The instructions are a little different than what I am used to (in terms of mixing order and beating time), but I followed them faithfully and came up with more than the 12 servings advertised. Score! I also made them different sizes, as I couldn't find my ice cream scoop and I was in a hurry. (As usual.)

I think I cooked them for 60 seconds or more too long. My oven normally needs an extra 2 to 3 minutes for cupcakes but I'd be more careful with this next time.
I frosted them with the mix, which I made according to the instructions included on the package. I gave a light hand on frosting as I had more than the 12 I thought I'd get (and also because I personally like a light frosting to cake ratio). YMMV. The frosting was rich and heavy and creamy and coconut-y. It's made with coconut milk too, so I thought that was a great supporting character in the frosting. I would totally use coconut milk in my homemade frosting too, something I'd not thought of.

I decided to top mine with sweetened shredded coconut (not included) but you could also use unsweetened. Or toasted, something I had planned to do but ran out of time. Or you could use something other than coconut. I bet toasted pecans or walnuts would work. Or cocoa powder dusted on top?
The cakes were light and coconutty and retained their moisture level several hours after they were made.
This portion went off for a hospitality-style "welcome to NYC" get together.
