Cupcake decorating classes at family-run The Cupcake Company in Medford, Oregon

Meanwhile, Susan Krebs with daughters Andrea Holt and Taylor Krebs got busy in the kitchen, starting with a handful of family recipes and adapting the basic formulas to accommodate numerous flavors. Susan Krebs mined other bakeries' menus for ideas and tested them on friends and co-workers at John L. Scott Real Estate.

In December, the family put up a website, www.the-cupcakecompany.com, and in January gave away 1,000 mini cupcakes at the Southern Oregon Wedding Expo in Medford. Since opening its doors less than two weeks ago, The Cupcake Company has sold out of its entire stock of several hundred cupcakes daily, says Jim Krebs.

Former professional baker Rebecca Hill, who owns a Medford baking-supply boutique, says at least two-dozen customers have shared dreams of starting cupcake bakeries since September, when she opened her downtown shop Sweet Stuff. Although she and others in the food industry saw the trend take off a few years ago, it still has momentum in Medford, she says.

"People have been waiting for it for so long," she says.

Lacking a retail source of specialty cupcakes, home bakers have taken matters into their own hands, armed with several popular cookbooks, fancy patterned wrappers, edible glitter and other sugary sundries. Hill's store has hosted several cupcake-decorating classes, and she has more planned for April, including a free decorating session for kids after the April 9 Pear Blossom Parade.


Their cupcake flavors (click for full list) include Lemon Drop, Samoa, Maple Spice, PB&J and Chocolate Cheesecake.
