Peanut Butter Ball Cupcakes

Inspired by the cupcakes at New York Cupcakes in Bellevue, WA... I decided to try my hand at baking chocolate dipped peanut butter balls inside a cupcake!


These cupcakes, were a two day adventure. Although, you could probably do them in one day if you started early enough.  The peanut butter balls really need time to set up in the freezer for several hours before you bake them.  That, I'm sure is the key to making sure your pb ball doesn't melt and that it holds it shape inside your cupcake!

Topped with a peanut butter frosting and a peanut butter m&m... these cupcakes were a HUGE hit with my new friends here in Germany.  Oh, did I mention... these are the first goodies I've made since moving to Germany!!
