The New York Daily News interviewed Magnolia Bakery owner Steve Abrams about their expansion to Bloomingdale's and overall expansion plans, and here's what he said:
Q Why did you choose to open in Bloomingdale's?
A We both have an obsession for detail and quality. We could have opened across the street and done more business in a bigger store. But we thought being aligned with Bloomingdale's was worth it.
Magnolia Bakery has an incredibly high sales per square-foot that is attractive to potential partners and landlords. For Bloomingdale's, we are a very good partner.
Q What is your five-year expansion plan?
A We plan to open four to five stores a year domestically and to expand internationally with a tightly controlled franchise model.
We are not looking to take over the world with 5,000 stores. It is not in our DNA. We want to have 100 to 120 stores overseas and 20 to 30 in the U.S.
In other Magnolia Bakery news (and I have a post I've been meaning to finish about their lemon and Japan relief cupcakes), at the end of June they'll be selling a Swan Lake cupcake! It's official description is: "a rich chocolate cupcake, topped with luscious chocolate and whipped vanilla icing, delicately crafted in the Magnolia swirl." It's part of a promotion with the American Ballet Theatre. Here's a photo to whet your appetite - they'll be for sale June 27-July 2 and were inspired by both the ballet and the famous (infamous?) black and white cookie.
