Pink velvet cupcakes with cream cheese frosting

Blogger lady J's musings made these pink velvet cupcakes with cream cheese frosting from the Hummingbird Bakery cookbook, and has the recipe. She writes:

Well, a little incident happened in the kitchen for we ran out of red food colouring and these cupcakes ended up turning a shade of pink instead.

I find working with cupcakes a tad bit difficult especially when it comes to the frosting, they never seem to turn out right and melts really quickly. Does anyone out there have any suggestions on how to get the frosting right?

I ALWAYS have issues making cream cheese frosting as well...

The trick to cream cheese frosting is to beat it really well with the butter before adding the sugar, and to only beat it after you've added the sugar to combine. Otherwise you'll "break" the frosting and it will turn into a runny mess.
