Test Kitchen: Godiva Red Velvet Cupcake Mix

 
I recently picked up this Godiva Red Velvet Cupcake Mix at an after Valentine's Day sale at Target for about $4 (regular price about $6) and I thought I would give it a try for all of you!
 
 
First of all, there were only two things in the kit: cake mix and chocolate chips.  The mix was only enough for 6 cupcakes, although it didn't say that anywhere on the package.  I only had to add a little oil, water and 1 egg, stir it all together (including the chips) and put it into the oven.
 
 
They took every bit of the 18 minutes recommended to bake, but they did come out looking pretty, didn't they?  I decided to fill and frost them with my own concoctions, so I cut into the centers of each cupcake to  make room for some ganache, and I'm so glad I did, because the chocolate chips were melty and perfectly suspended inside each one (something I always struggled to achieve on my own - was it the chips?) and I popped all 6 middles right into my mouth.


They went well with the cream cheese frosting I made and the cake itself was light and tasty, not artificial tasting or overly red, like so many red velvet cupcakes tend to be.  All in all, I'd say they were a success, but I don't think I'd pay full price for just six cupcakes I have to frost myself.  Next: Crumbs Cookies & Cream Cupcake Mix!
