Inspired by this lovely cupcake haiku sent in by Pauline, we decided to do a little research on sugar-free cupcake recipes. Browsing in Amazon, we found two well-received cookbooks that feature cupcake recipes. Unbelievable Desserts With Splenda: Sweet Treats Low in Sugar, Fat and Calories by Marlene Koch and there is a recipe for orange cupcakes on page 85. Also, there is Cooking Healthy With Splenda: A Healthy Exchanges Cookbook by Joanna M. Lund. On page 164, there’s a Devil’s Food cupcake recipe. These books are for Splenda converts, and we welcome all denominations to join in the communion of Cupcake Love.
