Cupcake Interview: Elizabeth Merrick

We are huge fans of this interviewee! Elizabeth Merrick is one of the founders of the fantastic Cupcake Reading Series. The Cupcake Reading Series where smart, funny and lovely women read their work. The next Cupcake is Wednesday, April 13 at Nolita(266 Broome St).

How often do you eat cupcakes?
Well, I savor our Cupcake Reading Series at the Lolita Bar at least once a month. For the first few rounds of the series, back when we started it in 2003, I baked cupcakes for all, but we found that even in moderation the cupcake/liquor combo is quite a hangover, even if you're still in your early twenties and usually have to work to get that effect. So now the actual pastry I eat maybe once a season, without bourbon as an accompaniment. For me, Cupcake is a concept, at this point, more than a food.

What's the best thing about eating cupcakes?
The icing--I'll admit it.

What's your favorite type of cupcake?
Yellow, with some fat pink frosting and a cute little decor to keep me
intrigued.

Favorite place to get cupcakes?
Naidre's in Brooklyn

How do cupcakes compare/contrast to other baked goods for you?
You know, I'd have to say way above most scones but below a really
good croissant.

Is there any innovation you'd like to see made to the cupcake that would improve it for you?
I want a savory cupcake, a sushi cupcake perhaps? Something delish to
serve at our readings so as not to induce sugar comas in our genius
women writers and readers. The decadence of a raw food cupcake--that
would be gorgeous.
