Can you tell us more about Let Them Eat Cake and how you got started baking?

I have been baking since 1979 when I started Let Them Eat Cake, Ltd. in Soho. We baked the most amazing cakes and pies in the city and served restaurants, hotels, corporate dining rooms and major Fortune 500 companies.

What kinds of cupcakes do you offer, and which are most popular? What are your specialties?

Our main specialty is the vanilla cupcake with Vanilla Frosting. We do chocolate, but that's it. Other things like carrot, etc. in my opinion are for cakes, not cupcakes.

Where can your cupcakes be purchased?

The cupcakes can be purchased by phone from our bakery in Brooklyn (718) 852-8792 or from our Manhattan office (212) 989-4970. We deliver!

What kinds of corporate events have you done? Is there a minimum (or maximum) order? Why do you think cupcakes hold appeal for office settings/corporate events?

We do all types of corporate events where the client wants specialty sweets. We have done events for high level designers, non-profit corporations, clubs, caterers, etc. Cupcakes hold appeal for office settings and corporate events because they are cute, they look amazing on the buffet, they are easy to handle, everyone can have their own and they can be customized to suit the event. Minimum orders are flexible depending upon the event and exactly what is needed to get the message across.

You match custom colors, often for corporate clients. How much trial and error goes into customizing colors, and have you now gotten it down to a science?

Custom color matching is done by our resident artist, Jeanine Alfieri. Jeanine is a sculptor, but a painter as well and is awesome with color. For her it is natural. All she does is look at the color and in several minutes . . . voila . . . it is done!

How much advance notice do you need to whip up a batch of cupcakes?

Because we work with large quantities, we need several days notice for an order. Everything is baked, dipped and decorated by hand.

What's the most unusual or outrageous request you've had for a cupcake order?

Most of our requests for cupcakes are not outrageous. Our customers want beautiful and elegant and that is what we deliver.

When left to your own devices, what kinds of fun cupcake (or other baked good) creations have you come up with?

Left to our own devices we enjoy making mini cakes—actual Let Them Eat Cake, Ltd. creations in miniature. They are so much fun and so cute, everyone loves them!

How often do you eat cupcakes?

Personally Jeanine and I do not eat our own cupcakes because we know what they taste like. We like to eat other bakery cupcakes to compare them and enjoy them.

What's the best thing about eating cupcakes?

For me the best thing about eating a cupcake it that there is nothing left over and no crumbs!
