From Australia's Cake That!
They are berry white chocolate chip cupcakes with whipped dark chocolate ganache, and little chocolate hearts! The surprise pieces of chocolate in this light textured cake are just divine!
Berry white chocolate chip butter cakes
250g SR Flour
250g Unsalted Butter
4 eggs (60g)
1 tsp baking powder
100 g fresh berries
100g white couveture- roughly chopped
1/4 cup milk
Place all ingredients except for berries into the Kitchen aid.
Beat with paddle attachment until light and smooth.
Fold in fresh berries. Pipe into 18 cupcake papers.
Bake at 175°C for 20 minutes.
Ganache
Bring 200ml cream to the boil.
Add in 400g rough chop couveture chocolate. Remove from heat.
Stir until smooth.
Cool overnight.
For a fluffy texture, beat in the Kitchen aid for 30-60 seconds!
