I'm sure it's not news to any reader of this blog that cupcakes aren't just big in big cities, but smaller towns too. Here's an article from the Statesman Journal about cupcakes in Salem, Oregon, which also lists three local places you can get these yummy goodies:
Joan Taylor, known as the Dessert Diva, said bakers such as herself also are a big reason for the rising popularity of the cake's little sibling.
"They were fairly normal until we started getting wild with it," she said.
Fillings are one part of the new taste experience; the icing is another.
Taylor has put Swiss meringue vanilla-bean icing on a cupcake, stuck the whole thing in the freezer until the icing hardened, then dipped the top into a chocolate sauce and topped the whole thing off with sprinkles.
Taylor also has been known to make key-lime cupcakes with coconut icing and even a peach cupcake with orange filling, which she calls her version of the Fuzzy Navel cocktail.
