We here at Cupcakes Take the Cake are seeing cupcake bakeries open all the time, in the United States and around the world, and field numerous emails from people asking for advice on opening a bakery (before you go sending one, since we are a blog, not a bakery, you'd best be advised to talk to an actual baker!).
I think we will see more innovations in cupcake flavors and packaging as well as more places doing mail order cupcakes to keep up with the market.

Cupcake Shops in 2008 will remain as strong as the owner(s) running the shop.
The cupcake isn't going anywhere. It's a timeless treat that is simply being embraced and rediscovered by just about everyone! Birthdays, Holidays, Baby Showers, Sip 'n Sees, Weddings...celebrations of all sorts, will keep the cupcake alive!
The real test of each of these many cupcake shops will be how well the business is tended.
Sorry to disappoint the nay-sayers, but Cupcakes were around before us, and will most likely out live us!

As for cupcake shops? Well, how are they different than bakeries? Will bakeries ever go "out of style"? I don't think so--"everyone and their sister" has a sweet tooth, and cupcakes are good for dieters, kids, and well, everyone and they are great for any occassion--everyone gets their own special treat...just for them.
