New Tennessee bakery The Cupcakery, and they're hiring

Meredith Layton of Clinton knows a good thing when she sees it. The speech therapist opened on Saturday The Cupcakery in Oak Ridge, a call-ahead pick-up cupcake shop located at 136 Bus Terminal Road across from the hospital behind Subway in Ridgeway Center.

Layton's sister started the business less than a year ago in St. Louis. Because it's doing so well, Layton decided to take the cupcake rage head on and open a location in East Tennessee.

Layton plans to open in June a second location at the new Cherokee Plaza in Bearden, next to Naples restaurant. The 1,200-square-foot spot will be a dine-in facility with outdoor seating.

The Cupcakery features six classic cupcakes that are available daily as well as feature flavors that rotate weekly. There are also seasonal cupcakes.

Layton, the mother of two boys, is in the process of hiring for the new Bearden location, which will employ 13. The Oak Ridge location has three employees.

We are currently operating on a call-ahead basis at our pick-up location in Oak Ridge. Same-day orders of up to 1 dozen cupcakes simply require 4 hours notice. Orders of over a dozen require 24 hours notice. Please watch for our dine-in location coming to Knoxville this spring!

I live in St. Louis, and I have tried the Cupcakery. I was vey disappointed in the quality of cupcake they serve. The cupcake was dry and lacked freshness. In addition, there was not enough frosting compared to the amount of cake. I rather wait until I am back in NY and able to get a much better cupcake at Sugar Sweet Sunshine for almost half the price.

I was excited to try the new cupcake bakery in Oakridge, but was dissapointed by their products, They might have a "made from scratch buttercream" but the cupcake itself was straight out of a box mix. I could taste the chemicals as soon as it hit my tongue. At $31/doz. I expect a freshly made product not a defrosted/box mix cupcake. Hopefully they will rethink their baking methods before the Knoxville store opens.

I was so excited to hear of The Cupcakery coming to Bearden....but what a disappointment! For a business to be based on just one product, you would expect it to be 'over the top' good...The cake itself was 'cake mix' straight from a box and the buttercreme, although good, was skimpy and needed more...they are going to have to do better than this to get any repeat business. I felt ripped off, by the price, for the quality of the product.
