Cold cupcakes

This weekend I basically feasted on cupcakes (more on that soon). We had some in the fridge and while my friend Courtney took one out and left it on the counter for a while to defrost, I found myself eating several cupcakes cold, and I liked them! Is that totally weird? Does anyone else not mind or even like cold cupcakes?

I don't think I'd want to eat them cold all the time, but once in a while, especially in summer, it was a delight.

I like cold cake, so why not? But I'd be afraid of losing some of the delicate flavor/s of the gourmet ones. Traditional yellow with vanilla frosting though would be great cold, I think!

You know, I really don't care if they are cold. I think most people (outside of the baking world, just your average folk) wouldn't even consider the temperature of their little paper lined treat

I made lemon cupcakes filled with lemon curd for a family get-together last summer, but it was so hot the cream cheese frosting was melting everywhere, so we had to leave them in the fridge. They were very refreshing, like a cold glass of lemonade.

I used to love cupcakes cold, until I was diagnosed with a Wheat Allergy. :(
Do you know of any wheat free cupcake recipes that do not turn out gritty or hard as a rock?

I actually prefer cold cupcakes...especially yellow cake with chocolate buttercream frosting and red velvet! Yum.
When we came back from NY we brought a huge box of cupcakes and I had to store them in the fridge at home as London was unseasonaly hot and the cupcakes tasted really nice cold, so I've done that a few times! also when I baked my own I kept them in the fridge as my kitchen is usually quite warm and my frosting was a bit melty!
