Pompoms at Happy Cakes Denver

Happy Cakes Denver is about to usher in some new flavors starting September 16th. See their site for all the details.

Some highlights: gluten-free chocolate, vanilla, lemon and pumpkin cupcakes will be availalble every Wednesday (and by special order at other times.

The ones that really intrigued me (pictured below) on their site were the pompoms, described as "your favorite cupcake, topped with crunchy & colorful cereal balls"

Here's some of what they'll be offering:

Maple Bacon

maple buttermilk cupcake w/ maple-cured bacon topped with vanilla butter cream dusted w/ streusel crumble & crowned with a couple bits of bacon...sweet & salty, a deliciously unexpected cupcake!

Mint Mocha (premium)

peppermint, coffee & chocolate cake topped with a coffee cream cheese frosting & finished off with a chocolate-dipped peppermint candy

Chocolate Raspberry Gananche
(premium)

A chocolate/almond cupcake, filled with fresh raspberry preserves, dipped in rich chocolate ganache, topped with a dollup of smooth chocolate buttercream and crowned with a candy raspberry

Champagne (premium)

A fun, bubbly treat...actual champagne flavors both the cupcake & the frosting

We were up in Colorado Springs over Labor Day weekend to spend time with our daughter. She's a freshman at the USAFA and it was Parents' Weekend. Well, when in Rome, right? We made our way north just to check our Happy Cakes! Adorable location, and we all agreed that the S'mores was our favorite flavor!

Their pom pom cupcakes are one of my favorites!! The chocolate flavor with fruity cereal are sooooo good. I also tried their snowball recently and it was delicious. It is an almond cupcake with almont buttercream dipped in coconut. Oh so yummy. Thankfully, for my waistline, I havn't been there recently. How sad.
