Cannoli cupcakes from Tofu and Cupcakes

I always feel a pang of...nostalgia, perhaps, when I discover a cupcake blog or site that I hadn't known existed, especially when it's as beautiful as Tofu and Cupcakes, both foods I very much like.

Cannoli cupcakes from Tofu and Cupcakes

Cannolis are a traditional Italian dessert composed of a pastry shell-tube filled with a sweet ricotta cheese filling with either chocolate chips or candied fruit mixed in. I could make the filling easy enough and just stick it inside my cupcake, but I wanted to come up with a way to integrate the pastry shell, too. The pastry shell component is just as important in my opinion. So I had this brilliant idea to replace the paper baking cups with pastry shells that have been shaped so that the cupcake can easily fit inside. I also dipped the shells in melted chocolate as you often see with cannoli shells. I made candied orange peels to put in the filling and I frosted them with chocolate Swiss meringue buttercream frosting. Then they got a few sprinkles of the candied orange peel. Needless to say, this was a very time-consuming cupcake! Candying the orange peel alone took me a whole day and it took me another day to make the shells.
