After-Eight Cupcake (and critique!)


Flickr's Zingersb seems to be a veteran cupcaker, and I am enjoying the looks of the After-Eight Cupcake, even though I am not traditionally a fan of mint and chocolate together. (No hate mail, please!) Zingersb complains that the "cake portion was dry and heavy, and didn't have much taste." Anyone want to recommend a moister, lighter chocolate-cupcake cake recipe? I am planning on trying one from the Baked cookbook when I get a chance.

Here is the chocolate cupcake recipe I use. It is for a dark chocolate cake but it is very light and the chocolate taste is great.

Also, those cupcakes do look fantastic....may have to try it out!

Thanks, Kate! I am a milk chocolate fan myself, so when something is too dark or too "cocoa-y" I get a headache. SO sad. Let us know if you do try this recipe, okay?
