Cupcake bakeries still thriving

The Cape Cod Times reports on a new cupcakery:

Tammy Knight-Gibbons is pretty sure she's not crazy.

This certainty, however, did not stop people from questioning her sanity when they heard she was planning to open a new business — a "cupcakery" called CupCapes of Falmouth — despite the dire economic tidings of recent months.

"I sat down and I thought about it," Knight-Gibbons said, explaining her decision to move forward in a decidedly tough business climate.

"There are a few businesses that are a little sheltered from the economy," she said, "and I think we're one of them."

Cupcakes — even high end ones — are an affordable indulgence and should retain their popularity during a downturn, she reasoned.

Knight-Gibbons is among a small but tenacious group of Cape Codders who are defying conventional economic wisdom and pursuing their business dreams.


They offer flavors such as peanut butter buddha, Mississippi mud pie, and coconut chocolate chip.
