Bacon and egg breakfast cupcakes





The blog Sunshine in the City made these breakfast bacon and egg cupcakes, which I think are totally adorable. (thanks to Judy McGuire for the tip!)

Here's what they wrote:

On Sunday Anthony's parents came over to our newly improved apartment for brunch and I thought this was the perfect opportunity to explore my creativity with cupcakes. We had waffles, bacon and fruit salad for brunch so I thought Carrot Cupcakes would be great for dessert! I used Ina Garten's recipe here (if you use it be sure to read the user comments about not baking them as long as the recipe says). In my version I skipped the raisins and substituted pecans for walnuts and used apple pie spice instead of just cinnamon (this wasn't intentional, I didn't realize I didn't have cinnamon). I highly recommend this recipe, these were delicious and the cream cheese frosting is perfect!!!

While shopping at Dylan's Candy Bar a couple of weeks ago for green gumdrops to make my St. Patty's Cupcakes I discovered Gummy Eggs and just had to buy them! They were my inspiration for the cupcake decorations. Now for my dilemma, what goes better with eggs then bacon right? Well I found some gummy bacon online but they don't carry it at Dylan's. I didn't really have time to order it so I thought I would just make some. I went to New York Cake Supply on Saturday and bought some gum paste mix. I figured if the Ace of Cakes people could make all kinds of things out of this stuff I could make a few strips of bacon. Well I did it!!! It took me about an hour of mixing, coloring and testing but I did it! Here are my cute little breakfast cupcakes!
