Updated: Thanks to everyone who corrected me about Katie Lee Joel - I am working in a hurry and messed up. Alexa Ray Joel is Billy Joel's daughter with Christie Brinkley, which I should know.
Katie Lee Joel (wife of Billy Joel) writes cookbooks and likes cupcakes! Here's a recipe of hers from CBS News (go there for video) and she just Tweeted that she shot cupcakes for her second cookbook The Comfort Table: Everyday Occasions. Her first cookbook is The Comfort Table.
Chocolate Stout Cupcakes
Are these cupcakes going to taste like a Guinness? No, they're delicious!! There are a lot of recipes for cakes and cupcakes that call for some kind of liquid, such as beer or soda. The liquid helps the cake stay really moist. The beer flavor isn't that noticeable; it's just a little interesting taste in the background. You probably wouldn't even notice if you didn't know. I was a little surprised at how good they were -- it's a surprising combination!
2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 cups sugar
1 cup stout
3 eggs
3/4 cup sour cream
1 tablespoon vanilla extract
1 (8 ounce) package cream cheese, softened to room temperature
1/2 cup heavy cream
1 pound confectioner's sugar
Preheat oven to 350 F. Line two muffin tins (for 24 cupcakes) with paper liners.
In a medium mixing bowl, sift flour, cocoa powder, baking soda, ginger, and salt. Set aside.
In a large mixing bowl, use an electric mixer to combine melted butter, sugar, and stout. Add the eggs, one at a time. Stir in sour cream and vanilla. Gradually stir in the flour mixture until incorporated.
Divide batter evenly into paper-lined muffin tin. Bake for 25-30 minutes, rotating pans once, until a toothpick comes out clean. Cool and turn onto a wire rack. Let cool completely before icing.
In a medium mixing bowl, use an electric mixer on medium-high speed to beat the cream cheese until fluffy. Add heavy cream. Reduce speed to medium-low and gradually add confectioner's sugar. Top each cupcake with icing. Decorate with green sprinkles or a dusting of cocoa powder.

P.S. Katie Lee is actually Billy Joel's wife, not his daughter. However, she is MUCH younger than he is, and only 4 years older than Billy Joel's daughter, Alexa Ray
