CeliacsTips.com got the details from Babycakes NYC owner Erin McKenna about her upcoming cookbook, BabyCakes: Vegan, Gluten-Free, and (Mostly) Sugar-Free Recipes from New York's Most Talked-About Bakery, which according to Amazon, will be published on May 5th. She reveals that there are 6 cupcake recipes in the book, but since we are still waiting for our galley to arrive, we don't know all of those are yet! Her publisher says one is red velvet though, and the first printing is 25,000 copies.

Here's a little of the interview:

7. What is your favorite cupcake at BabyCakes? What’s your favorite overall menu item at BabyCakes? What is your top bestseller at BabyCakes?
My favorite cupcake is definitely the brownie cupcake. My favorite menu item, however, would have to be the cornbread. It’s so overlooked and incredibly tasty. I would say the top seller is our brownies.

8. You have two BabyCakes locations (Lower East Side NYC, Los Angeles). Are you planning on opening additional locations in New York City? Or, out of state?
I do have plans to open other locations but am not ready to disclose where. My goal is to open many BabyCakes NYC so we can share the joy.

Speaking of BabyCakes NYC, Erin recently blogged about what it was like for the health inspector to visit her bakery:

This Saturday amidst the packed stream of customers, our Health Inspector cut in line, flashed his badge and a smile. NOT exactly something you like thrown in the mix of an already hectic day, but what can you do? With the mantra: "keep calm and carry on" repeating through my head I tried to ignore the inspector as he made his way around the bakery: hawk-like, red pen poised.

After 30 minutes or so he approached me with a big smile. "I like it here," he said. "This place is very clean". I almost fell over. A compliment from the health inspector? I didn't think they were allowed to! I quickly hugged Sabrina (seen in the pic) because she is the reason this place is so impeccably clean and organized. Thank you Sabrina!
