The blog Tofu and Cupcakes posted these cherry cordial cupcakes (go there for recipe and way more photos), calling them a "failure" and writing:
The chocolate candies just melted…turning my cupcakes into weird, hollow, gooey, cherry messes. Yeah, just a mess on the inside, an incredibly scrumptious mess.
I was disappointed, I sort of imagined the cordial would melt and combine with the batter and turn the center into a dense chocolate cake. When I said they were ruined, Josh got oddly aggressive defending them, he angrily told me “I don’t care if you think they’re a disaster, they’re amazing!” He later said the gooey bottom portion was like “the treat at the end of your…treat.” Yes, they were really, really good but I had to eat mine on a plate with a fork and that just breaks all the rules of cupcake-eating. Bake at your own risk.
Because the box of cherry cordials came with only 10 pieces, half of the cupcakes didn’t get one and were just straight cherry. My BFF Matt had a couple of these and told me that they were definitely in the running to be his favorite of all the cupcakes I’ve ever made, and he’s tried close to all of them.
I still think the cupcake above is beautiful. You can also feast your eyes on this cupcake Flickr set from Tofu and Cupcakes.
