I think these red, white and blue cupcakes, which manage to resemble firecrackers, are pretty spectacular - they're by Flickr user death by cupcake

Boulder's Tee & Cakes used a flag and red swirl on one cupcake, and on another, sprinkles to signify red, white and blue (as well as red velvet cake and white frosting)
Chicago's Sugar Bliss Cake Boutique also uses colored star sprinkles, but with an entirely different look.
