The Post Star takes us inside the new cupcake bakery Bettie's Cakes in Saratoga Springs, New York, giving a taste of its retro feel with very modern, original cupcake flavors.
On a daily basis, the café offers classic flavors like chocolate, vanilla, red velvet, peanut butter cup and cappuccino. To spice things up, Murphy rotates in more exotic fare.
S'mores, apple pie, cookie dough and tiramisu find new life through cupcake incarnations. So far Murphy has developed more than 50 flavors, and the recipe file keeps growing.
Her favorite is the black raspberry ice cream cone, a flavor combination she is especially proud of creating.
"It was lucky. I was playing around with extracts, and it came out the first time," she said.
A computerized ordering system helps her track sales and the popularity of flavors. So far, she said she sometimes is surprised by what people choose.
"I've learned that some people call themselves purists. They only want vanilla or chocolate. That was shocking," she said.
Other customers are willing to go out on a limb and try bolder cupcake flavors like root beer float or cherry cola.
"Key lime pie seems to be popular," Murphy said.
In addition to catering to her customers' flavor preferences, Murphy offers cupcakes in "A," "B" and "C" cup sizes to satisfy every appetite.
Cupcake aficionados can also customize basic cakes with a choice of six frostings, various toppings and organic jam fillings, called "injectables."
For the truly adventurous, or hungry, Bettie's Cakes offers cupcake sundaes. Murphy adds soft-serve ice cream, whipped cream and toppings to a cake foundation for an extremely decadent dessert.
The recently posted on Twitter that they're going to be offering gluten-free chocolate cupcakes and frosting shots!

I'm an aspiring baker and hope to open up a bakery myself one day, so seeing a business so adorable like Bettie's is inspiring for me. I hope they do well considering the spot they're in isn't exactly the best for customers, but I know a lot of the local highschoolers know of this place and hopefully they'll get tons of business!
