Cupcake recipe for "Tastes Like PB&J Cupcake" from Rawdorable -ebook

Tastes Like PB&J Cupcake

*Makes one full-size cupcake

"Makes me feel like a kid again"

*Makes one full-size raw cupcake for those times you just want what everyone else is having

1/4 cup almonds, finely ground into flour
1/4 cup cashews, finely ground into flour
1 Tbsp. ground flax seed
1 Tbsp. date paste
1/2 tsp. blackstrap molasses
1/2 tsp. apple cider vinegar
touch of vanilla
pinch of sea salt
*berry “jelly” (equal parts berry puree mixed with date paste)
*chocolate sauce (agave nectar thickened with cocoa powder; optional)
*cashew pieces and/or fresh berries for decoration

In a small bowl, combine the cashew and almond flours, ground flax and sea salt. Stir with a whisk or use an electric mixer.

Next, add the date paste, molasses and vinegar. Whisk/mix to combine. The batter should be moist, but not so damp that it requires “baking” in a dehydrator (although you could if you desire).

Form the batter into a cupcake shape, leaving a melon ball-size hole in the center and a small amount to the side to top it off. Fill the cupcake with “jelly” (equal parts berry puree mixed with date paste; I used strawberries in mine. You can even add some chia seeds for a more "gel"-like consistency) and top it with the excess dough. Carefully blend in the seams.

Frost the top with chocolate sauce (optional, but I like it that way) and more “jelly.” Garnish with cashew pieces and/or fresh berries.

*To make date paste, soak about a cup of dates in water until soft (I tend to do this overnight). Add to a food processor along with some of the soaking liquid. Puree into a paste, addiing more of the soaking water, as needed. This is good to have on hand for all your unbaked cupcake projects.
