Recipe and giveaway!



Along with our friends at Wiley, we are giving away a copy of Weight Watchers' new book Eat!Move!Play! The whole book is based around teaching and feeding children so the whole family leads a healthier lifestyle -- it ties in nicely with all of the recent awareness about obesity in American -- particularly with Michelle Obama's and Jamie Oliver’s initiatives.





Can there be healthy cupcakes? Read on and find out...







Here's a cupcake recipe from the cookbook:


Carrot Cupcakes with Cream Cheese Frosting

Serves 12, Prep time 20 minutes, Bake time 25 minutes

1¼ cups all-purpose flour

2/3 cup granulated sugar

2 medium carrots, shredded

1 apple, peeled, cored, and shredded

1/3 cup golden raisins

¼ cup sweetened flaked coconut

1 teaspoon grated orange zest

1 teaspoon cinnamon

1 teaspoon baking soda

¼ teaspoon salt

2 large eggs, lightly beaten

¼ cup canola oil

6 ounces fat-free cream cheese, at room temperature

¼ cup confectioners’ sugar, sifted

1 teaspoon vanilla extract

1 tablespoon milk

Mixed candied fruits for decorating tops (optional)

1. Preheat the oven to 350ºF. Spray a 12-cup muffin pan with nonstick spray.

2. Stir the flour, granulated sugar, carrots, apple, raisins, coconut, orange zest, cinnamon, baking soda, and salt together in a large bowl. Beat the eggs and oil together in another bowl. Stir the egg mixture into the flour mixture just until combined. Spoon the batter evenly into the muffin cups and bake until a toothpick inserted into the center of each cupcake comes out clean, 20–25 minutes. Cool in the pan on a rack 5 minutes; remove the cupcakes from the pan and cool completely on the rack.

3. To make the frosting, combine the cream cheese, confectioners’ sugar, vanilla, and milk in the bowl of an electric mixer and beat just until creamy. Spread the frosting over the cooled cupcakes. Make faces or designs on top of the cupcakes with the dried fruit, if using.

I try to make my cupcakes with whole-wheat flour, or reduce the sugar, or whatnot to health-ify them. Also, if you have to use tub frosting, I beat it to incorporate more air into it. You then need less frosting, so less super-sweet stuff goes into your belly! :)

I usually substitute oil with applesauce or mashed bananas. It makes the cupcakes both healthier and more flavorful! Instead of heavy buttercreams I experiment with thing glazes and used reduced fat cream cheese when making cream cheese-based frosting. I love to fill the cupcakes with natural homemade fruit compotes made with splenda. It cuts down on the calorie and fat count and keeps the cupcakes extra moist!

To healthify cupcakes, I often play around with the amount of oil in the recipe (reducing it, of course), use some or all whole-wheat flour, and never frost with tub frosting, which always has trans-fats. Sometimes, I don't even use frosting (oh, the horror!!)

I have made cake mixes into cupcakes and I have used diet soda or applesauce to lower calories. I've also made homemade cakes with Splenda.

I'm on Weight Watchers and I've been baking cupcakes for a while now. It's so nice to see that there IS a way to have them both together! I would love to have this cookbook! My toddler daughter is just starting to have "real" foods, and I'm always looking for ideas!

substitute dark chocolate for milk chocolate (dark chocolate has shown some health benefits such as helping to lower blood pressure). i also prefer dark because it is less sweet. you still get the chocolatey taste with better-for-you goodness!

Wow! I teach preK and would love to win this book. We use whole wheat flour and soy flour as much as possible. I like natural dark brown sugar and you need less to sweeten. I think the dried fruit is a great idea! Our kids like to decorate with strawberries, kiwis,raisins, and bananas. Also dusting with powdered sugar tastes great but no fat needed! lsmiggen@comcast.net

Honestly I don't try and make my baked goods healthy unless I'm making muffins for breakfast or something. I figure if I eat healthy all the time then every once in a while I can have a decadent cupcake! And I don't feel bad about it!

Our favorite way to make cupcakes is adding in pureed pumpkin or sweet potatoes. You can't taste the difference and they turn out so yummy!!!

I make a recipe that I got from weight watchers years ago one box of spice cake mix and a can of pumpkin puree nothing else ! they come out so moist! the frost with 1/3 less cream cheese frosting. yummmm

Healthiest way to enjoy a cupcake? Making a large batch, and bringing it to work, Most of the cupcakes are gone before you can say you brought some! Mostly one is left, 'cause noone likes to take the last one, but I do!!
