Butternut Squash With Mascarpone Frosting

We've all heard of butternut squash soup or ravioli, but who'd have thought they'd go great in a cupcake? Butternut squash is a seasonal treat you can get from the farmers market and store for the winter. There were plenty of them already out at the Green City Market in Chicago on Saturday. There are many different varieties and they will last for at least a month stored in a cool dry place (I've kept them for even longer and they were fine). These are some delicious looking butternut squash cupcakes with mascarpone cream cheese frosting from Lisa at Korean American Mommy.
