Meatloaf cupcakes!

Unlike the turkey cupcakes I posted last week that were just cupcakes with turkey images on them, The Meatloaf Bakery in Chicago actually makes meat and salmon and vegetarian savory dishes in the shape of cupcakes. I'll have more about my delicious visit there soon, but for now, check out their recipes at ABC Chicago - I like the idea that you can bake meatlaof in a cupcake pan. Wonder what else can be turned into a cupcake shape?

I always make my meatloaf this way. Then I package and freeze the leftovers. It's so easy to take one out and pop it into my son's lunchbox.

I make banana breads into single serving sizes also :)
