Seattle's Cupcake Royale is expanding to Bellevue

Seattle cupcake bakery Cupcake Royale has announced on their blog, Legalize Frostitution, the opening of their fifth bakery at 21 Bellevue Way NE:

The newest addition to the Cupcake Royale family will make its home in one of America's original IHOP buildings, complete with all the architectural charm and whimsy of those bygone days. Remember the A-frames and the wood paneling? As Jody likes to say, this is "what our café would have looked like had we opened in 1971." We're lucky enough to work once again with Roy McMakin on a quick and easy, guerilla-style makeover, to create a hip and homey neighborhood cupcake café that we think you’ll really love.

This café is going to be special for sure. A little bit different from our Seattle locations, this one will celebrate the history of the building and the quirkiness of the original design with a sweet and sassy combo of found decor, relics from the original IHOP, and custom pieces created especially for Cupcake Royale, like the 30-person, Doug Fir picnic table where you and all your friends can hang out on our patio. For those of you who frequented the original IHOPs of yore, you may remember those cool open kitchens. Well, we’re keeping that, too! The café will feature a wide-open kitchen where wide-eyed cupcakers of all ages can marvel at the magic of our behind-the-scenes operations.

The perfect partner for all this cupcake love? STUMPTOWN! We'll be the first café in Bellevue to be brewing those legendary Stumptown beans.

Anyway, one of the very cool things about the new Cupcake Royale location is that the space it will be occupying is actually a former IHOP. "One of America's original IHOP locations," actually, according to press materials--one from back in the days before the company abandoned the kitschy A-frame construction and obsessive love of wood paneling. Unlike some of the more modern looking Cupcake Royale locations scattered across the city, this newest one will be more rustic, humble and community-oriented with an outdoor garden, rummaged furnishings and a long picnic table for communal seating. The best (and strangest) thing, though? In addition to making use of "relics" of the old IHOP found during demo and construction on the space, owner Jody Hall and designer/neighbor/regular customer Roy McMakin decided to make use of the original IHOP open kitchen, allowing customers to see all the magical elves dedicated bakers and frosters doing their work.

This fifth location for Cupcake Royale will officially open for business at the end of September, at which point the Mobile Party Cart will roll out and be used for events and catering. But until then, it'll be out front of the new shop in Bellevue daily from 11am until 6pm (or until they run out of cupcakes). So if you're looking for a fix now and just can't wait, you know what to do.

I was in Seattle on August 27th for the International Food Bloggers Conference...and Cupcake Royale was there on the first night with hundreds of minis to taste. The red velvet cupcakes were fabulous!
