Vanilla Cupcakes For Two!


Some days you don't want to bake a dozen cupcakes, some days you don't have 11 other people to share cupcakes with, but those days you might still want a cupcake or two.

That's where this recipe comes in! It only makes two cupcakes and can be adapted to lots of flavors with some experimentation (sprinkle in some lemon zest or add a little cocoa).

Unfortunately, I don't have a frosting recipe that only makes enough for two cupcakes. I had some of my favorite chocolate buttercream left over from another project that I used.

One Bowl Vanilla Cupcakes For Two
Adapted from How Sweet Eats

1 egg white
2 tablespoons sugar
2 tablespoons unsalted butter, melted and cooled.
1/4 teaspoon vanilla
1/4 cup all purpose flour
1/4 heaping teaspoon baking powder
pinch of salt
1 1/2 tablespoons milk

Preheat oven to 350°F. Line a muffin pan with 2 paper liners.

In a small bowl, add egg white and sugar, whisking until combined. Add in vanilla and melted butter and stir until mixed. Sift in flour, baking powder, and salt and stir until smooth. Stir in milk. Divide batter equally between the 2 cupcake liners.

Bake for 10-12 minutes, or until cake is set and a toothpick inserted in the center comes out clean. Let cool completely and frost with whatever frosting/glaze you have around (I used leftover chocolate buttercream).

I made these tonight added a hersheys kiss in the center before I bake them and then frosted with pb frosting yummy!
