Endicott College students bake 1,260 cupcakes for Taylor Swift's birthday, and charity

In December, Endicott College students Heather Smiles, Carolyn Fernberg, Jessica Pinault and Alexandra Middleton baked 1,260 cupcakes as part of their 1,000 for Taylor Swift charity project! Wow. This is the kind of project that is why I love the wide world of cupcake blogging and the communities that form out of creative projects that involve cupcakes. They're taking their fandom of their favorite singer and turning it into a good cause (for more about that, see below. I hope it will culminate in them going for cupcakes with Taylor Swift! Last week, about 100 students gathered at Dr. Wylie’s home to bake 1,260 cupcakes to donate to The Open Door Food Pantry in Gloucester, MA. The event was coordinated by students Heather Smiles, Carolyn Fernberg, Jessica Pinault and Alexandr...a Middleton, who plan to do 13 large, fun, charitable acts in sets of 1,000 over the course of the next 13 months, all leading up to a road trip to Nashville TN to meet the inspiration of their enthusiasm, Taylor Swift. The first project, baking 1,000 cupcakes, was a huge success!

The first batch looked nothing like the beautiful cupcakes we had been expecting. The turbo ovens did not work the way Pauly B had explained and we had to go through some serious trial and error to figure out how to cook them right. This ended up taking up about two and a half hours. Jessie and Heather went on a Dunks run and by the time they got back, we took pictures, and started baking again it was 4:00. Alexandra, who was manning the ovens, took a quick count of the cupcakes we had done and realized we had only baked about 250.

Oh. My. Gosh.

That’s when we kicked it in to high gear. Jessie, Carolyn, and Heather began mixing boxes and boxes of batter while Alexandra threw cupcake trays in and out of the ovens. We ran back and forth from the kitchen to the garage switching hot pans for batter filled ones, our cowboy boots in a heap under Doc’s kitchen table. It turned into somewhat of a game show, us trying as hard as we could to bake as many as possible. How could we not reach our goal? We HAD to make 1,000. Soon, 6:00 rolled around and we were down to our last few boxes of cake mix. Doc and his assistant Shari came in to start setting up for the event and helped us mix and scoop some of the batter. When the last batch was finally put in the oven we all breathed a huge sigh of relief, but the anticipation was overwhelming as we waited for them to bake so we could count them for the final total.

1,260 cupcakes. We baked 1,000 cupcakes in three hours. That has to be some sort of record. We freshened up a bit and before we knew it, residents were pouring in and frosting cupcakes dozens at a time. The event was a success and we were in total disbelief the entire time. We ended up raising $113 (of course, 13!) for The Open Door food pantry. This was an amazing feat, but to our utter surprise Doc decided to donate $1,000 dollars to our cause bringing the total to $1,113 and 1,260 cupcakes. Such a huge donation! We are so thankful to Doc for his amazing contribution. And to all of the residents who came to help celebrate Tay’s birthday, thank you so much! You made the event unbelievable and we’re so excited to keep bringing more events like this to campus!
