I like several things about this funfetti cupcake by blogger Chocolate-Covered Katie (tagline: "the healthy dessert blog"). One that it's funfetti - I know "fun" is in its name, but I really find funfetti cupcakes fun and cheerful. Second, it's a cupcake for one. I guess technically all cupcakes could be called cupcakes for one, but the accompanying recipe is for a single serving of this cupcake. How decadent! Yet not really, because it only has 150 calories. Enjoy!
