- 1 cup boiling water
- ½ cup cocoa, firmly packed
- 1 cup Sir Kensington’s Classic Mayonnaise
- 2 ¼ cups all purpose flour
- 1 ¼ cups sugar
- 2 teaspoons baking soda
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 6 tablespoons cocoa
- 6 tablespoons butter
- ¼ cup strong hot coffee
- 1 teaspoon vanilla extract
- 3 cups powdered sugar drizzle of milk Preparation for cake:
- Preheat oven to 350° F.
- Grease and flour two 8-inches round cake pans.
- In a small bowl, pour boiling water over cocoa and stir until smooth. Set aside.
- In a different bowl, sift together flour, baking soda and salt. Set aside.
- In a large bowl of an electric mixer, beat together mayonnaise and sugar on medium speed until it is light and fluffy (about 3 minutes).
- Add vanilla and the cocoa mixture and beat until mixed.
- With the mixer at low speed, gradually add the flour mixture, beating until batter is just combined.
- Pour batter into prepared cupcake/muffin pans and bake 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool for 10 minutes in pan, then place on cooling rack and cool completely.

- 6 tablespoons cocoa
- 6 tablespoons butter
- ¼ cup strong hot coffee
- 1 teaspoon vanilla extract
- 3 cups powdered sugar

Instructions:
- Beat ingredients on low speed, gradually increasing to high speed until frosting is light and fluffy.
- Use offset spatula to spread frosting on top of cupcakes.
