Chocolate Cupcake Recipe Made With Sir Kensington's Classic Mayonnaise

Sir Kensington's makes some delicious gourmet mayonnaise and here's a chocolate cupcake recipe made with their mayonnaise.

Cake Ingredients:

  • 1 cup boiling water 
  • ½ cup cocoa, firmly packed 
  • 1 cup Sir Kensington’s Classic Mayonnaise 
  • 2 ¼ cups all purpose flour 
  • 1 ¼ cups sugar 
  • 2 teaspoons baking soda 
  • 1 teaspoon vanilla extract 
  • ¼ teaspoon salt 
  • 6 tablespoons cocoa 
  • 6 tablespoons butter 
  • ¼ cup strong hot coffee
  • 1 teaspoon vanilla extract 
  • 3 cups powdered sugar drizzle of milk Preparation for cake: 
Instructions:

  1. Preheat oven to 350° F.
  2. Grease and flour two 8-inches round cake pans. 
  3. In a small bowl, pour boiling water over cocoa and stir until smooth. Set aside. 
  4. In a different bowl, sift together flour, baking soda and salt. Set aside. 
  5. In a large bowl of an electric mixer, beat together mayonnaise and sugar on medium speed until it is light and fluffy (about 3 minutes). 
  6. Add vanilla and the cocoa mixture and beat until mixed. 
  7. With the mixer at low speed, gradually add the flour mixture, beating until batter is just combined. 
  8. Pour batter into prepared cupcake/muffin pans and bake 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean. 
  9. Cool for 10 minutes in pan, then place on cooling rack and cool completely.

Ingredients for icing:

  • 6 tablespoons cocoa 
  • 6 tablespoons butter 
  • ¼ cup strong hot coffee 
  • 1 teaspoon vanilla extract 
  • 3 cups powdered sugar 
  • drizzle of milk Preparation for icing: 

Instructions:

  1. Beat ingredients on low speed, gradually increasing to high speed until frosting is light and fluffy.
  2. Use offset spatula to spread frosting on top of cupcakes.
