Thin Mint Truffle Cupcakes

Just because there is green frosting doesn't necessarily mean these cupcakes are St. Patrick's Day related. These cupcakes are Ghiradelli chocolate cupcakes with mint buttercream icing and topped with a thin mint truffle.
