Top-secret cupcake tasting!

Tomorrow I'll be participating in a private cupcake tasting (and hopefully Rachel will be there for the yumminess). I can't tell you too much about it now, but suffice it to say I'm excited. Today, a related sample arrived in the mail, taunting me with its deliciousness. Have you ever had lemon curd? I don't know what was keeping me away from this delicious concoction! I'm hooked.

I'm thinking about doing a buttermilk-based vanilla cupcake with lemon curd filling and either a glaze or some mild cream cheese frosting. Anyone have any recipes they'd like to submit?


I'm quite taken with SpoonNYC's Lemon Curd. Honestly, I'm glad I only got a small jar because I could easily eat the whole thing out of the container with my fingers. Gross, but true. Oh my goodness this stuff is heavenly. I'll have to get some more for the cupcakes because at this point there's just not enough. Maybe a truckload of SpoonNYC lemon curd?

Lemon Curd rocks!! My nan used to make it lemon curd sandwiches! Oooh I'm gonna find a way to work lemon curd into a dessert recipe now - maybe even cupcakes!

We LOVE lemon curd at Main Street Cupcakes in Ohio. We have a very popular Lavish Lemon cupcake. It is vanilla cake, filled with lemon curd and topped with lemon butter cream. YUM

You can make your own lemon curd too! I used Paula Deen's recipe from the food network website, and it came out really well. It's not hard.
