OXO Good Cookies: Banoffee Spice Cookies

OXO, who makes the coolest kitchen tools, is hosting a Cookies for Kids’ Cancer fundraiser. Bloggers like me were sent a kit of baking products and asked to bake some cookies. You can use the store locator to find these products below.

What to do with ripe bananas? Since I have both bananas and Heath toffee pieces in my pantry, I made Banoffee cookies. Banoffee pie is a English pie made with bananas, toffee and cream. I developed a recipe after researching a few blogs.  The Kitchn has a recipe for Banana White Chocolate Toffee cookies.  I wanted to incorporate apple pie spice and cardamom so I nixed the white chocolate chips.

 Banoffee Spice Cookies (adapted from The Kitchn)

1/2 c. unsalted butter, room temperature
1 c. sugar
1 egg, room temperature 
2 large bananas
1 tsp. baking soda
2 c. flour
pinch of salt
1/2 tsp. apple pie spice
1/2 tsp. cardamom
1/2 c. Heath toffee chips

Cream together butter and sugar into mixing bowl until fluffy. Add in the egg.

Using two ripe bananas, I mashed them up with baking soda.
In a separate bowl, mix the flour with the apple pie spice, cardamon and a salt.
Then add the dry ingredients slowly until well mixed.
Stir in the toffee chips.

Drop in dollops onto a parchment paper or foil-lined baking sheet.
Bake for 11-13 minutes or until the edges are golden brown.
Cool completely on a wire rack.

Jimmy Carter, Peanut Butter And Other Nut Butter Cupcakes

I saw this photo below of peanut butter cupcakes and I had to post. Today is former President Jimmy Carter's 90th birthday and he was a peanut farmer. If you do like peanut butter, then check out Peanut Butter & Co. I met Adam Shapiro who does publicity and events at Peanut Butter & Co last week at TECHmunch Atlanta. Peanut Butter & Co has other peanut butter flavors including Cinnamon Raisin Swirl, The Bees Knees, and Mighty Maple. Their butters are gluten-free and kosher pareve.

I am allergic to peanut butter, but luckily I can eat cashew or almond butter. Lifehacker posted a helpful guide to show how to make nut milk and nut butters.

Cupcake Pop Culture Moment: SNL's Lazy Sunday

A lot of journalists have assumed that the apex of the cupcake trend in pop culture was the scene of Carrie Bradshaw having a cupcake outside Magnolia Bakery in Sex in the City. I beg to differ. In 2005, when many friends emailed me on a Sunday about the Saturday Night Live skit that aired the night before is when the cupcake moment in pop culture had happened. It also coincided with the start of the Digital Shorts boom for the The Lonely Island guys at SNL and the rise of You Tube.  Getting cupcakes at Magnolia Bakery has been a thing ever since. Adam and Chris predicted the popularity of Google Maps which has all but ended MapQuest's use. However, they were wrong about baker's dozen. A true baker's dozen is actually thirteen cupcakes. We posted the video back in 2005. Nine years later, Andy Samberg has a new show, Brooklyn Nine-Nine,  and a Golden Globe. Chris Parnell is on Suburgatory and has the sexiest voice on television.  It's been nine years, and I have yet to see the "Chronicles of Narnia", but I do love Red Vines.

Gluten-Free Lemon Blueberry Muffins From Mom Loves Baking

I don't normally talk about cupcakes vs. muffins on Cupcakes Take The Cake. In the past, I have considered muffins to be "frenemies" in the baked goods world. However, I met Lise Ode of Mom Loves Baking at TECHmunch and she told me about her gluten-free Lemon-Blueberry Muffin recipe. Her recipe is so good that she is a finalist in the 47th Pillsbury Bake-Off this year. Lise is 1 of 100 finalists and the only one from Georgia. She will be competing for the million dollar prize in Nashville on November 3, 2014.

Mini cupcakes, so that's okay, right? Bought banana pudding and candy crunch ($1 each) from Baked by Melissa at JFK Airport, which opens at 5:30 a.m.! The candy crunch was the best by far.
